Serving delicious fish is so quick and easy with Saucy Mama!

Today is the last day of the Saucy Mama Fabulous with Five Bloggers Recipe Contest. I’ve had so much enjoyable creating and cooking that I’ll be sad to see the challenge end. The challenge was to create delicious dishes with only 5 ingredients. Fifty bloggers were give a Saucy Mama Bloggers kit with six of Saucy Mama’s latest dressings, marinades and mustards. I LoVed every Saucy Mama product and found it so easy to incorporate into my everyday cooking. And WOW ~ making a scrumptious dish with only 5 ingredients is really the way to go! Quick and Easy! As you know, I’ve submitted recipes for an appetizer (Mustard Hot Links Spiral with Saucy Mama Mascarpone), pizza (Tarragon Lemon Mustard & Bratwurst Pizza), breakfast or dinner hash (Sweet Heat Yammy Hash with Fried Egg), a great salad (Quick 5-Star Santé Fe Coleslaw), and a complete dinner (Saucy Mama Pacific Rim Brats and Chicks Burgers with Rice and Ginger Spinach).

Today, I want to share with you 2 easy fish dinners. 

Sweet Heat Steelhead with Broccoli

Apricot Ginger Pineapple Salmon with Creamy Chipotle Broccoli

Both of these dishes can be made in less than 10 minutes under the broiler!

Spread on Saucy Mama and broil!

SAUCY MAMA FISH DISH #1

Sweet Heat Steelhead with Broccoli

Saucy Mama Sweet Heat Marinade

Just pour Sweet Heat marinade over the fish and brocolli and broil!

  7-inches under the broiler and ready in about 7-minutes! The time under the broiler is dependent on the thickness of the fish. 

If the fish is not done but getting a little too charred, I turn off the broiler and let it sit in the super hot oven for about 3 minutes.

There ya have it one super easy and quick fish dish that was so delightful yummy!

I loved the broccoli broiled with the sweet heat marinade ~ gently charred under the broiler.

I will make the broccoli this way again!

Apricot Ginger Pineapple Salmon with Creamy Chipotle Broccoli 

Saucy Mama Apricot Ginger Mustard for the Salmon!

Saucy Mama Sante Fe Creamy Chipotle Dressing Broccoli!

HERE is how to do it!

 Sprinkle lemon pepper on salmon fillets. Spread Saucy Mama Apricot Ginger Mustard on salmon and pineapple.

That’s it ~ quick and easy!

You know the drill, place the oven rack 7-inches under the broiler  and cook until fish is almost opaque in the center.

I like to remove my salmon from the broiler before the center is completely done.

The salmon will continue to cook while plating. 

Steam the broccoli, about 3 minutes with 1/4 cup water, covered. 

Add as much Saucy Mama Sante Fe Creamy Chipotle Dressing as you wish ~ that’s it!

Time to plate your quick and easy delicious salmon pineapple dish!

Okay, okay ~ I can hear a few of you asking for a recipe. 

*** R E C IP E ***

Apricot Ginger Pineapple Salmon with Creamy Chipotle Broccoli 

Ingredients: 

1/4 cup Saucy Mama Apricot Ginger Mustard

1 pound salmon fillet, cut in serving portions – 2-4  fillets

1 cup or more fresh pineapple chunks, however much to match your servings

1/2 teaspoon lemon and pepper seasoning salt

2 cups broccoli florets

1/4 cup Saucy Mama Sante Fe Creamy Chipotle Dressing

Directions:

Adjust oven rack 7-inches below broiler. Turn broiler to HIGH heat. Place the filets on a cookie sheet that has been sprayed with cooking oil. Sprinkle fillets with lemon pepper salt and brush with Saucy Mama Apricot Ginger Mustard. Brush pineapple chunks with apricot ginger mustard too. Broil for about 7-minutes or until almost opaque inside, time depends on thickness of fillet. IF salmon is browning too much cover with foil and turn the broiler off. Let the fish sit in the hot done until desired doneness. Meanwhile, steam the broccoli.

To steam broccoli: Bring 1/4-cup water to a boil, add broccoli, cover and steam about 3 minutes or until desired tenderness. Uncover broccoli, strain any liquid and toss in Saucy Mama Sante Fe Creamy Chipotle Dressing. 

Plate salmon fillet with pineapple on top and broccoli to the side!

Now that’s some easy and quick SaUcY  YUM!
